I finally tried out VincentC’s instant laksa recipe.

2 packages of Shin Korean instant noodle, 1 can of coconut milk, water and the soup base included in the noodle.  Serves 2.  But according to the instant noodle package, each pack serves 2.  I normally can’t finish a package of instant noodle on my own… but this instant laksa was de.li.ci.ous.  It was soooo creamy~  I wanted more…

Try it!  Let me know how it goes!

Does anyone know a low-fat version of this??   ^_~

    Hey Vancouver!

The laksa looks good! I think I know which korean noodle you’re talking about. But I haven’t seen them here!

Ena, yeah I finally tried it! I totally exceeded my expectation! I thought V said he doesn’t add water to it… but there’s no way you can cook it without water… so, I added about 1 1/2 can of water.

Now that’s different. Looks really good. Not sure if I’ve tried it before.

  7. ena Says:

Oh that’s what we missed!! i will add water next time:-)

  8. Ryan Says:

Hi Ena, so you just cooked the noodles in water and then poured a can of coconut and the soup base in it?

  9. Ryan Says:

I see you have a well-balanced diet, honey. There’s a small sliver of carrot on your noodle. lol

ooooh, I’m gonna try that recipe. Seems simple enough……I can boil water and open cans! haha

  11. ena Says:

Hi Ryan, i think i just cooked the noodle with half a can of coconut milk. the recipe is frm cookpad –>http://cookpad.com/mykitchen/recipe/297561/
the recipe says “water and coconut”, so i think i added water, too… maybe it wasn’t enough.

Just a passerby who enjoyed reading your blog. Thought I’d leave you a message. I love Laksa but it’s difficult to find a good place for it here. I’ll give your recipe a try! :)

YuMmY!! It sounds & looks good! I can’t wait to try it myself. (when are you gonna cook for me???) hehe :)

I tried out your recipe, Martie. It was excellent (and so simple to make)! I got plenty of compliments from Rob that night. The Shin noodles is usually too spicy for me. But with the coconut milk, it was perfect!

It’s Friday night and guess where I’m heading? To my neighbourhood Safeway to pick up my 2 packs of Shin noodles and coconut milk! lol I’m gonna try this instant laksa recipe! I figured the fat in this meal will provide a great foundation for a night of GREY GOOSE! boo-yah! Will let you know how it goes, bob!

Martie-pooh, I tried your recipe tonight!! It was so simple to make! AND OOOOOH-SOOOO-YUMMMY!! It went great with the Kokanees! lol You gotta share more of your recipes!!

FYI, I’ve tried making the noodles with low-fat coconut milk but it just ain’t the same. I ended up having to add another can of regular coconut milk into the mix! My heart stopped beating for 10 secs but that’s alright. Nothing a little GG can’t fix! lol I hear those things are great for flushing out your arteries!*

    * the above should only be performed by trained professionals only! lol

  18. Josee Says:

I tried out your recipe. It was one of the most delicious laksa I’ve had! It was easy to make too! Thanks!!

(after reading Kev Mc’s comment, I stuck with the regular coconut milk! Thanks, Kev Mc!)
