I finally tried out VincentC’s instant laksa recipe.
2 packages of Shin Korean instant noodle, 1 can of coconut milk, water and the soup base included in the noodle. Serves 2. But according to the instant noodle package, each pack serves 2. I normally can’t finish a package of instant noodle on my own… but this instant laksa was de.li.ci.ous. It was soooo creamy~ I wanted more…

Ena, yeah I finally tried it! I totally exceeded my expectation! I thought V said he doesn’t add water to it… but there’s no way you can cook it without water… so, I added about 1 1/2 can of water.
Now that’s different. Looks really good. Not sure if I’ve tried it before.

the recipe says “water and coconut”, so i think i added water, too… maybe it wasn’t enough.

I tried out your recipe, Martie. It was excellent (and so simple to make)! I got plenty of compliments from Rob that night. The Shin noodles is usually too spicy for me. But with the coconut milk, it was perfect!
It’s Friday night and guess where I’m heading? To my neighbourhood Safeway to pick up my 2 packs of Shin noodles and coconut milk! lol I’m gonna try this instant laksa recipe! I figured the fat in this meal will provide a great foundation for a night of GREY GOOSE! boo-yah! Will let you know how it goes, bob!
Martie-pooh, I tried your recipe tonight!! It was so simple to make! AND OOOOOH-SOOOO-YUMMMY!! It went great with the Kokanees! lol You gotta share more of your recipes!!
FYI, I’ve tried making the noodles with low-fat coconut milk but it just ain’t the same. I ended up having to add another can of regular coconut milk into the mix! My heart stopped beating for 10 secs but that’s alright. Nothing a little GG can’t fix! lol I hear those things are great for flushing out your arteries!*
